[DNI]: TACO SALAD WITH A TWIST



Here is a really quick and easy meal that is healthy and delicious!! I honestly think this entire meal took 10-12 minutes to make, including prep!!! This is great for lunch or dinner! I guess you can call this a taco salad with a twist?

Here’s what you need and what I used:

  • Ground Turkey (I used Trader Joe’s brand – $3 for 1 lb., you can’t beat the price for quality protein!)

  • Taco seasoning (I used the Target brand little packet)

  • Salsa (Which ever one you love! I used Trader Joe’s Salsa Autentica)

  • Spinach (I used the $2 bag of Trader Joe’s fresh spinach)

  • Garbanzo beans (I used the Trader Joe’s brand…$.79!!)

  • Shredded Mexican blend cheese (You can use whatever you have on hand really, but I buy this stuff in bulk from Costco – Wellsley Farms brand)

  • Tortilla chips (I LOVE the Trader Joe’s Organic Blue Corn Tortilla Chips)


The only cooking you need to do is brown your meat, and this will be quick! Since I’m using a non-stick pan, I don’t add any oil to this. I set the temperature to medium heat and throw in the ground turkey. I let it cook all the way through, while I continue to turn the meat over. Once it’s no longer pink (maybe 5-6 minutes), I drain the excess fat in the sink and lower the heat. I add about ¼ of the taco seasoning bag and maybe a ¼ – ½ of the salsa jar for the entire pound, but use your instincts. Eye ball it to make sure it’s coated well enough for your liking. While all of those flavors are simmering together, I begin to plate the rest of my meal. I lay out a bed of spinach on each plate and add a layer of the ground turkey mix. I layer on some cheese (you will begin to see it melt a little) and then I open the garbanzo beans and drain the can in the sink before adding a layer to each plate. I crush tortilla chips and top over my salad and you are ready to eat!!! SUPER easy, SUPER healthy and SUPER yummy…more importantly, SUPER quick to prepare!! Feel free to add a little sour cream, guac or even a little extra salsa on top! Hope you enjoy making this, as much as you will eating it!!!
